I’ve always wished I could observe Chef Andrea Berton while he’s cooking. His restaurant stands in the futuristic area of Porta Nuova Varesine in Milan, a district which welcomes his startlingly original ideas with amazement.
The sensation is that you enter a dreamlike dimension, where time flows slowly and you are licensed to abandon yourself to extraordinary illusions. Staff is young but extremely professional, a rare and precious plus in star-winning establishments.
The menu features noble flavours which present themselves undisguised on the palate.
Having nibbled delightful home-made bread and breadsticks, we allowed ourselves to be seduced by mouthwatering duck tortelli, young spinach and saffron cream. We followed this by choosing soft polenta, Grana Padano fondue and Norcia black truffle… irresistible. Our sweet finale was overwhelmingly exquisite: a chocolate soufflé with fiordilatte ice cream, served in super-size format for you to cut into portions.
At the end of our Diners Club dinner, the maitre led us to the kitchen and introduced us to the Chef himself, who warmly invited us to watch his starry team in action.
And so we found ourselves at a table for two, spectators at the mysteries of culinary excellence, and tasting the Chef’s amazing offerings… an unrepeatable experience!
